Our small-batch process slices each organic heirloom potato to the perfect thickness, thin enough for crunch, thick enough to taste the potato. We don't peel them; the skin contains the flavor and fiber.

The difference: Cold-water washing preserves starches that create our signature texture. No bleaching. No chemical treatments. No pesticides or fertilizers ever touch these potatoes.

DOUBLE-FRY PERFECTION

Here's where magic happens: Our patented double-frying process creates that impossibly light, crispy, puffy texture. We cook in certified organic, non-GMO rice bran oil extracted using traditional expeller-pressing methods, never chemical solvents like hexane or acetone. We also offer a version cooked in 100% pure pasture-raised beef tallow from Beffa Springs Ranch in Petaluma. No BHT, TBHQ, or citric acid additives, just clean fat from a small family farm we know personally.

Precision matters: Temperature-controlled kettles and our proprietary two-stage cooking method ensure even cooking and natural preservation. No synthetic chemicals. No artificial preservatives. Just technique and timing.
